Different Types Of Chutney           


                                A chutney is a family of condiments or sauces in the cuisines of the Indian subcontinent. Chutneys may be realized in such forms as a tomato relish, a ground peanut garnish, yogurt or curd, cucumber, spicy coconut, spicy onion or mint dipping sauce.


GREEN CHILLI CHUTNEY


◆ Ingredients

● Green chillies - 50 gm (about 10)

● Salt - 11/2 tsp

● Cumin - 1 tsp

● Asafoetida - 1/2 tsp

● Tamarind - 5 gm

● Coriander leaves - 1/2 bunch


Method

1. Clean all ingredients. Wash thoroughly. 

2. Grind to a smooth paste.



MANGO CHUTNEY 


◆ Ingredients

● Raw green mango - 1

● Onions - 1

● Ginger - 1inch

● Green chillies - 3

● Coconut - 1/2

● Salt - to taste


◆ Method

1. Take out a thick extraction of coconut milk.

2. Slice all of the ingredients fine. Add coconut milk and salt. Mix well.



COCONUT CHUTNEY 

◆ Ingredients

● Fresh, grated coconut - 125gm

● Dry chillies - 10gm

● Lentils - 30gm

● Mustard seeds - 1/2tsp

● Salt - to taste 

● Curds - 120gm

● Oil - 1tsp


Method

1. Soak lentils in water for half an hour. Drain.

2. Grate coconut.

3. Heat oil. Add mustard seeds. As they crackle add dal. Fry till golden. Add chillies and grated coconut.

4. Fry for about 2 minutes.

5. Remove and grind into a smooth paste with salt.

6. Add curds to ground ingredients and mix well.


ONION CHUTNEY

◆ Ingredients

● Red chillies - 5 gm

● Onions - 500 gm

● Tamarind - 10gm

● Asafoetida - a pinch 

● Salt - to taste 

● Sesame oil - 1Tbsp

● Mustard seeds - 1Tsp

● Split black gram - 1Tsp


◆ Method

1. Slice onion.

2. Heat oil. Fry mustard seeds and gram until they crackle.

3. Add asafoetida and red chillies and fry crisp. Remove.

4. In remaining oil, fry onions till crisp and brown.

5. Grind spices with tamarind.

6. Add onion and salt with a little water and grind into a thick paste.


GARLIC CHUTNEY 

◆ Ingredients

● Curry leaves - 1 Spring

● Coconut - 125gm

● Red chillies - 10gm

● Garlic - 15gm

● Lime (juice) - to taste

● Sesame oil - 1 1/2Tbsp

● Salt - to taste


◆ Method

1. Peel garlic, grate coconut.

2. Grind garlic and chillies. Add coconut and grind.

3. Add lime juice and salt.

4. Heat oil. Fry curry leaves and add to chutney.


MINT CHUTNEY

◆ Ingredients

● Mint - 1/4 Bunch 

● Pomegranate seeds  - 10gm

● Green chillies - 5gm

● Onions - 30gm

● Salt - to taste 

● Sugar - a pinch


◆ Method

1. Wash mint. Remove coarse stems.

2. Peel and chop onions.

3. Grind all ingredients together.


TOMATO CHUTNEY

◆ Ingredients

● Ripe tomatoes - 450 gm

● Sugar - 450 gm

● Red chillies - 10gm

● Garlic - 15gm

● Ginger - 15gm

● Vinegar - 160ml

● Salt - to taste 


◆ Method

1. Grind chillies, garlic and ginger with vinegar.

2. Scald tomatoes and remove their skins. 

3. Cut them into slices, add remaining vinegar and boil until soft.

4. Add sugar, ground ingredients and salt, and boil gently till the right consistency for chutney.
